Dal and vegetables vada

Ingredients:
½ cup wheat flour
½ cup Corn flour
½ cup Rice flour
1 cup Tur dal, masur dal, moong dal (equal ratio, boiled)
5 tsp chopped onion
4 tsp each of Spinach,
3 tsp spring onions
3 tsp ginger garlic paste
1 tsp garam masala
1 tsp cumin seeds
3 tsp coriander leaves
2 tomatoes chopped
5 tsp fenugreek leaves (finely chopped)
1 tsp boiled peas
1 boiled and mashed potato
1 tsp grated carrot
1 tsp grated beetroot
1 tsp green chili finely chopped
1 tsp red chili
1/2 tsp turmeric
5 tsp oil
2 tsp ghee
Salt to taste

Directions:

In a cooker boil equal portions of tur dal, masur dal, moong dal, and potatoes. Filter the water. Mix all flours and dry roast for 5 minutes. Allow to cool to room temperature. Add all the spices, boiled dal, potato and vegetables. Add 1 tbsp of oil and make soft dough by adding water. Divide the dough into equal parts. Roll one part with hand or roll pin into small rounds. Heat the pan with oil. Place the vada on the greased pan and cover for 3 minutes. Cook both sides until golden brown and crispy. Apply ghee while cooking. Serve hot with curd or unsalted butter. It tastes very good. If you like you can add flour and vegetables of your own choice like cabbage, cauliflower etc. You can also add boiled dal like tur, chana, moong, masur dal to make the vada crispier. You can add any green leaves of your choice to give more vitamins. This recipe is good for health.
