Mixed Vegetable Biryani

Ingredients:

3 Cups Basmati Rice
2 Cups Mixed Vegetables
½ Cup Onion (cut into thin long pieces)
1 Cup Yogurt
2 Tomatoes chopped
1 tsp Red Chilly Powder
1 tsp Coriander powder (dry coriander)
6 Cloves
2 Cinnamon stick
3 Cardamoms
6 tsp Ginger-Garlic paste
4 Green Chilies
1 tsp Garam masala Powder
1 tsp Turmeric Powder
½ Mint leaves
2 tsp Ghee
2 Bay Leaves
4 tsp oil
¼ cup Coriander leaves

Direction:

Cut mixed vegetables into small cubes (Potato, Beans, Carrots, Green Peas and Cauliflower). Soak the rice in water for 15 minutes. Drain the rice, add 4 cups of water and cook till each grain is separate. Marinate all the spices and powders in yogurt for 30 minutes. Fry the bay leaves and onions in ghee till golden brown. Add the cut vegetables and sauté for 5 minutes. Add the marinated masalas to the vegetables, add 1 cup of water. Cover and cook till the vegetables are soft. Once the vegetables are cooked, drain the excess water if any. Mix the cooked rice with the vegetables and sauté for 5 minutes. At last add ghee and coriander leaves. Serve hot with Onion Raita.
