Vegetable Paratha

Ingredients:

1 cup Potato boiled
¼ cup Carrot
½ cup Tomato
1 cup Caulli flower pieces
1 cup Spinach
¼ cup Cabbage
¼ cup Kohlrabi (Nool Kol)
Coriander leaves
2 green chilies
2 cup Rice Flour
2 cup Maida Flour
Salt to taste
1 cup Onions
½ tsp Turmeric powder

1 tsp chili powder

Direction:

For vegetable stuffing:

Grate carrot and kohlrabi. Cut all other vegetables into small pieces. Heats the pan with 4 tsp of oil, and add onions, green chilies and all vegetables. Fry well. Add chili powder, turmeric, coriander leaves and salt. Mash all the cooked Vegetables to a fine paste.

For Parathas:

In a bowl add maida, rice flour, salt and oil. Try to prepare soft dough without adding much water. Divide the dough into small portions and flatten each one lightly. Put a little Vegetable stuffing on it and close it. Seal the edges well. Roll out on a floured surface and roast on a hot pan with a little Oil till done on both the sides. Similarly prepare the remaining Parathas. you can prepare these parathas in oven, for roasting. Serve hot with Tomato sauce.
