Vegetable Sesame rice

Ingredients:

1 ½ cups Vegetables (chopped capsicum, carrots, potatoes, peas)
½ cup Sesame seeds(White)
4 tsp Coriander seeds
5 nos Red chilies
5 leaves Curry leaves
2 nos Green chilies(slit)
½ tsp Mustard seeds
½ tsp Red gram
½ tsp Oil
1 cup Rice
Coriander leaves for garnishing
Salt to taste

Directions:


Boil the plain rice and keep aside. Roast sesame till it splutters and becomes golden brown in color. Take 1 tsp. oil in a pan and roast the coriander and the red chilies till it gives an aroma.
Powder the sesame, coriander and the red chilies and keep aside. Heat the remaining oil in the pan and add mustard seeds. When the mustard splutters, add chana dal and fry till golden brown. Next, add curry leaves and green chilies. Add all the vegetables, salt and turmeric powder. Fry the vegetables till they are cooked. Now, add the sesame-coriander powder to the vegetables and mix well. Switch off the gas. Mix this vegetable with the rice well. Garnish with coriander leaves. Good for those sesame lovers.
