Maize Rolls

Ingredients:

¾ cup Maize flour
½ cup Refined flour
4 tsp oil
Water
Salt to taste
Oil for fry

For curry:

¼ medium cabbages, shredded
1 tomato, chopped
3 spring onions, chopped
1 capsicum, chopped
4 beans, chopped
1 tsp vinegar
½ tsp chilli powder
1 tsp cumin seeds
Salt to taste
3 tsp ginger, garlic paste
4 tsp tomato sauce
1 tsp chilli sauce
¼ tsp sugar
5 tsp oil
½ cup coriander leaves.

Direction:

In a bowl mix both flours. Add salt and oil. Knead into dough with water and divide into 10 portions. Roll out each like puree size, and prick the surface with a fork. Deep fry them till crisp and brown, when frying fold each round in half to form U shape. Drain and place on a grease absorbent paper. Heat the pan with 5 tsp oil, add cumin seeds, onions, capsicum, cabbage, spring onions beans and tomatoes fry all items till light brown. Add salt, chili powder, sugar, and ginger garlic pastes add chili and tomato sauce. Close the flame and add vinegar. To serve, fill each taco with curry followed by the garnishing. Serve immediately. All vegetables cut into very small pieces.
