Uttapam

Ingredients:

1cup parboiled rice
1 cup urad dal
1 cup rice
½ cup onions, chopped
2 Green chilies, chopped
1 tsp ginger, chopped
1½ tsp fenugreek seeds
2 tsp cumin seeds
½ cup coriander leaves
Salt to taste
4tsp oil

Direction:

For the Uttapam batter, soak parboiled rice, urad dal, ordinary rice and fenugreeks in sufficient water for 6-8 hrs. Drain and keep aside.
In a mixer grind the gram and rice’s into a thick paste by adding little water and salt. Cover and keep aside to ferment for 10-12hrs. Preferably overnight.
Heat the dosa pan, and pour a ladleful of the uttapam batter into the centre, spread the batter in a quick circular motion, to form a flat pan cake. Drizzle all around with a little oil.
In the centre of uttapam add onions, cumin seeds, ginger pieces, green chilies and coriander leaves. Remove and place on a serving platter.
Prepare remaining uttapam’s following the same method. Serve hot with coconut chutney.
