Chick pea’s vada


Ingredients:

1 cup Onion (chopped)
½ cup Mint
½ cup Coriander leaves
1 tsp Cumin Seeds
4 Green Chilies
3 tsp ginger garlic paste
Salt to taste
1 tsp. Coriander powder
Vegetable Oil for frying
Chick peas 2 cups (Chana dal)

Directions:

Soak the chick peas overnight. To the food processor add chick peas, green chilies and ginger salt as required grind coarsely. Remove the ground paste to a bowl to this add chopped onions, chopped mint and coriander leaves, cumin seeds and coriander powder mix well. Heat oil, take small amount of mix with hand and flatten it with fingers slowly drop that into the oil. Deep fry the vada until golden brown or crispy. We can put 5 or 6 at a time and fry.

Vegetable Vada

Ingredients:

2 cup Urad dal
1/2 cup grated carrot
1/4 cup chopped French beans
1/2 cup chopped cabbage
1/4 cup crushed green peas
1/4 cup coriander and mint leaves (chopped)
1 tsp finely grated ginger
1 onion chopped
6-7 finely chopped green chilies
Salt to taste
Oil for fry

Directions:

Soak the Urad dal for 15-20 mins and grind it to a paste in the mixer. (If the paste is too watery the Vada won't come crispy).Now mix all the vegetables, green chilies, onions chopped, and herbs (mint, coriander). Add salt to the dal paste. Meanwhile keep the oil hot and ready for frying the Vadas. Fry Vadas, preferably with a hole in the middle till golden brown. Serve it hot with green chutney or coconut chutney.

Fried Dal Vada

Ingredients:


For Vadas:

1/3 cup urad dal (black gram)
1/2 up Moong Dal (green gram)
1/2 cup Chana dal (Bengal gram)
A pinch of asafetida
4 green chilies
1 inch ginger
2 tsp cumin seeds (jeera)
3 cups Oil for frying
1/2 tsp turmeric powder
Salt to taste

For Green Chutney:

1 cup coriander
1 cup mint (pudina)
2 bread slices
1 tsp coriander seeds
2 red chillies
1 tsp cumin seeds
3 tsp tamarind pulp
Salt to taste
1 green chillies

Directions:

For Vada’s: Soak 3 dals for 3-4 hours, grind dal with chili, ginger, cumin seeds, and all above ingredients without adding water. Batter should be of Vada consistency. Heat the pan with oil, put the vada’s in oil. Fry it till it become golden brown in color.
For Chutney: Soak bread in a water for 2 minutes. Heat the pan with oil add coriander seeds, cumin seeds, red chilies, green chilies, coriander leaves and mint leaves fry well. All the ingredients along with a bread garlic flakes, tamarind, and salt grind it in a fine paste. Serve hot vada’s with chutney and sauces. Dal vada is delicious snack rich in protein. Enjoy as evening snack or side item in dinner.

Palak vada

Ingredients:

2 cup Spinach
2 cup Gram flour
3 tsp wheat Flour
4 cloves
1 tsp Garlic chopped
2 Green Chilies (or as per taste)
1 tsp Cumin Seeds
1 tsp ginger chopped
2 red chilies
2 cardamoms
1 cinnamon sticks
Salt to taste

Directions:

Clean the leaves. Heat the pan with 2 tsp of oil. Now add cloves, cinnamon, cardamom, green chilies, ginger garlic, red chilies, cumin seeds, spinach leaves and salt mix and fry well. Now grind a smooth paste. In a bowl add besan flour, wheat flour, add spinach grind paste. Add salt and water if require. Prepare batter like dosa. Heat the dosa pan when hot, put a spoonful of batter and spread it with the back of the spoon to make a thin round. When done on one side, flip over and brown the other side. In a non-stick pan, put a few drops of oil. Serve hot with green coriander chutney - coriander, green chilies, garlic, one tomato, salt, tamarind all chopped together. Nutritious and looks as good as it tastes.
